Both Vaji Ram & Ravi and Sriram's IAS are coaching institutes of repute. For Main Examination, their utility is proven. As far as preparation for Preliminary Examination is concerned, it would be premature to talk about merits and demerits as the pattern is new and last year, there was limited information relating to new pattern. for Public Administration in Hindi Medium, you can look for Abhay Kumar (Synergy IAS, Delhi),  Atul Lohia (Prabha IAS, Delhi) or may be Uniyal (Uniyal IAS, Delhi). Physics in Hindi medium is not very popular. Still, you can talk to Vimal Singh (Photons IAS, Delhi) or Dr. Vajpayee (DIAS, New Delhi). General Studies has a vast and vague syllabus. It is a long term planning to prepare effectively for GS as UPSC is adopting a creative and innovative approach. You need to look at the different constituents defined in the syllabus and prepare an effective plan covering the whole syllabus. Reading newspaper daily particularly the editorials is must. you can start with NCERT for building the basics which would act as foundation as you move further. Yes, you can. Philosophy in Hindi medium is among most popular optional subjects. Shiv Sahay Awasthi (AIR 34, CSE 2010),  topper with Hindi Medium and Mithlesh Mishra (AIR 46, CSE 2010) deserve special mention as both had Philosophy as one optional subject. But, before you decide for subjects like Chemistry, be aware of the exam related requirements. Look at syllabus and past year's papers. Economics as optional is a good subject but, for those who have prior knowledge base and interest in the subject.
